Easy Coconut Flour Banana Bread

This banana bread is one of my favorite go to recipes. Its super easy to whip up and combined with a nut butter, makes a hearty breakfast. I make this anytime I have old bananas around. It is dairy free, gluten free, refined sugar free and freezes very well.

You can bake it in a loaf pan, into muffins or a 9×13 cake pan. It can easily be converted into a healthy banana birthday cake just by adding a yummy cream cheese or chocolate icing.  This recipe was adapted from detoxinista.com.

Ingredients:

  • 10 eggs
  • 1/3 honey, coconut sugar or maple syrup
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tbsp vanilla extract

Directions:

  1. Add all ingredients into blender or food processor.
  2. Blend until smooth.
  3. Grease 9×13 cake pan with coconut oil or butter.
  4. Pour mix into pan.
  5. Bake at 350 degrees for 35-40 minutes or until golden and firm.
  6. Let cool and enjoy!
