Sweet Potato Shepard’s Pie

This is a spin off of the traditional Shepard’s pie that seems to satisfy every man. It’s the very definition of a meat a potato dish. The sweetness of the carrots and sweet potatoes makes this version an exquisite balance of flavors. This is Paleo and Whole 30 approved and freezes very well! Serve with a side salad for a wholesome dinner.

Ingredients:

  • 3 lbs of sweet potatoes ( about 6-8 average size potatoes)
  • 2 lbs ground beef (97/3 is ideal)
  • 1 large onion
  • 1 tbsp oil of choice (butter, grapeseed oil, avocado oil etc.)
  • 6-7 large carrots
  • 4 cloves garlic
  • 1-2 cups broth or water
  • 2 tsp dried thyme
  • pinch red pepper flakes (about 1/8 tsp)
  • salt & pepper (I use about 2- 21/2 tsp salt and 1-2 tsp pepper)

Directions: You will need an immersion blender for this recipe or a really good potato masher.

  1. Wash potatoes. Then put them on a cookie sheet and place them in the oven at 350 for 45-55 minutes or until soft.
  2. Then peel and slice carrots. Dice onions, and mince the garlic.
  3. Add onions, meat, carrots, thyme, crushed red pepper salt, pepper and garlic to a skillet on medium heat.
  4. Cook until meat is browned.
  5. Add 1 cup of water. Place lid on skillet and let steam for about 10 minutes stirring occasionally. Cook until water is evaporated and carrots are soft. If the carrots are still hard after 10-12 minutes, add more water or broth and simmer longer.
  6. Take the sweet potatoes out of the oven. Let cool just long enough to handle.
  7. Remove peeling from the sweet potatoes. They should remove with ease.
  8. Place peeled sweet potatoes in a bowl and mash with immersion blender or potato masher until smooth. Add a little salt for taste.
  9. Spread potato mixture over meat mixture and serve! (You can also transfer the meat mixture and mashed sweet potatoes into a casserole dish and serve it that way too. I just try not to dirty more dishes than I need to!)

* Use a foil or glass container with a covering for an easy healthy freezer meal! This meal will last in the freezer for 3 months if it’s well covered. Just thaw before cooking. Place it in the oven at 350 degrees for about 20 minutes or until center is warm.
